Ingredients: 1 medium butternut squash, peeled and diced. 8 ounces pasta of choice gluten-free if necessary. 1 cup unsweetened almond milk. 1/4 cup nutritional yeast. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 tablespoon lemon juice. 1/2 teaspoon onion powder. 1/2 teaspoon dried thyme. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Boil the diced butternut squash until tender, about 10-15 minutes. Drain and set aside. Cook the pasta according to package instructions until al dente. Drain and set aside. In a blender, combine the cooked butternut squash, almond milk, nutritional yeast, garlic, olive oil, lemon juice, onion powder, dried thyme, salt, and pepper. Blend until smooth and creamy. In a large skillet, heat the butternut squash sauce over medium heat until warmed through. Add the cooked pasta to the skillet with the sauce and toss to coat evenly.
