KING PRAWN AND GREEN PAWPAW SALAD WITH NAM JIM DRESSING
16 large cooked king prawns, peeled, deveined and tails intact
1 small green pawpaw, skin and seeds removed, julienned
2 small Lebanese cucumbers, cut in half lengthways, seeds removed and thinly sliced on the angle into half-moons
1 punnet cherry tomatoes, cut in half
1 small eschalot, peeled and finely sliced
1 small handful coriander leaves
1 small handful Thai basil leaves
1 small handful mint leaves, roughly torn
1 small handful Vietnamese mint leaves, roughly torn
Nam jim dressing
3 cloves garlic, finely chopped
4 coriander roots, finely chopped
1 tsp sea salt
2 tbsp light palm sugar, crumbled
2 tbsp fish sauce
1/2 long red chilli, seeds removed, finely chopped
1/2 long green chilli, seeds removed, finely chopped
juice of 1 large lime
Serves 4
For the dressing, place the garlic, coriander root and sea salt in a mortar and pound with pestle until the mixture makes a rough paste. Remove and place in a bowl.
With a mortar and pestle, dissolve the palm sugar with the fish sauce, ensuring there are no lumps. Add to the garlic and coriander mix, along with chopped red and green chillies, and stir well to combine. Add the lime juice. Taste and adjust if necessary, to ensure there is a balance of sweet, sour and salty.
Mix all salad ingredients together in a large bowl and add enough dressing to wet the salad. Mix through thoroughly. Share between four plates and top with any leftover dressing. Serve immediately.

At home on a Monday obsessing about food, so I made some raw chocolate - recipe thanks to the Wellness Warrior, Jess. Enjoy! #raw #rawfooder #chocolate. What you'll need: 110g raw almonds 170g coconut oil (solid) 4 tbs cacao A handful of medjool dates, chopped ¼ cup maple syrup (or more if you like it sweet) What to do: 1. Line a baking dish with non-stick paper. Place in the freezer to chill while you mix up the ingredients. 2. Grind almonds in a blender or food processor until they are fairly fine (not a powder though). 3. Melt coconut oil in a saucepan over gentle heat (don’t let it get too hot). 4. Remove from heat and stir in the cacao, almonds, dates and maple syrup. 5. Pour the mixture into the dish, making sure it spreads out thinly and evenly. 6. Put into the freezer until it has set, and then keep in the freezer between pig outs.

Simple Chia Berry Pudding Ingredients • 1 ripe Banana • 0.5 cup Blueberries • 1 cup Raspberries • 0.5 cup Water • 3 tablespoons Chia seeds • 2 teaspoons light Agave or 1/4 teaspoon Stevia powder Optional Super foods: 2 teaspoons Acaí berry powder and / or 1 teaspoon Camu camu. Methods/steps 1) Add all of the ingredients to a blender and process until incorporated. Let the pudding chill in the fridge overnight, if you want the seeds to fully swell.
