Ghoul's Switchel for Two People
Makes about 32 oz total, two 16-oz servings
1 tablespoon apple cider vinegar (
1 tablespoon fresh lemon juice
1 tablespoon freshly grated ginger
1/4 teaspoon fine sea salt
2 teaspoons pure maple syrup
1 teaspoon blackstrap molasses OR 2 teaspoons regular/dark molasses
1 tablespoon sorghum syrup
Mix everything thoroughly until the syrups and salt dissolve. Refrigerate for 1 to 4 hours so the ginger gets acquainted with everybody, then strain if you don't want ginger bits. Make sure it is COLD cold. You don't want lukewarm vinegar water unless you enjoy sadness.
For normal everyday hydration, water and regular meals are enough. I make this when I want something tasty after sweating or being out in the heat, not because everybody needs homemade electrolytes all day.
Water: obviously the main hydration component.
Salt: the most important addition if I’m specifically making this for sweaty-day hydration. You lose sodium when you sweat, and sodium helps your body maintain fluid balance.
Sorghum syrup: this is my main sweetener because it feels very right in switchel, and I grew up on it. It has this earthy, caramel-y flavor that works beautifully with ginger, and unlike plain white sugar, it brings along small amounts of minerals. It is still sugar.
Maple syrup: mostly there because sorghum, molasses, ginger, and vinegar can all get VERY LOUD together. Maple smooths everything out and contributes a little carbohydrate without making the drink overly sweet.
Blackstrap molasses: tiny amount. I mean it. Blackstrap is nutritionally interesting because it contains minerals like iron, magnesium, calcium, and potassium. I only use a teaspoon because I don't want cough syrup taste.
Orange juice: gives the drink some carbohydrate along with potassium and vitamin C. Potassium is itself an electrolyte involved in normal fluid balance, nerve signaling, and muscle function, while citrus juice is a major dietary source of vitamin C.
Lemon juice: contributes some vitamin C, although at one tablespoon it is not exactly carrying the nutritional team on its back. Vitamin C does help your body absorb non-heme iron from plant foods, so putting citrus in the same drink as sorghum and molasses makes nutritional sense. Mostly, though, the lemon's job is making the acidity taste bright and citrusy.
Fresh ginger: contains gingerols and other biologically active compounds, and this one actually has some interesting human research behind it. Trials and meta-analyses of ginger supplementation have found reductions in some markers of inflammation, and one randomized study found that taking ginger daily for several days reduced exercise-induced muscle soreness. There is also some evidence that ginger may help knee osteoarthritis symptoms, although that evidence is mixed and a lot of the research is not especially high quality. So: potentially useful, genuinely interesting, NOT “one glass of switchel will evict inflammation from your joints by sundown.” I personally use a full tablespoon because I want to taste the ginger.
Apple cider vinegar with the mother: contains acetic acid, which is where the more defensible ACV research gets interesting. Small human studies have found that vinegar taken with certain carbohydrate-rich meals can reduce the post-meal glucose and insulin response, possibly in part because it slows gastric emptying. What I would NOT say is that ACV generally “soothes the gut” or “helps break down food,” because the evidence does not support that broad claim. And while the mother contains material produced during fermentation, research has not established that having “the mother” gives ACV some special clinically proven health benefit. I use the kind with the mother because it's what's in my pantry.
