Cola Cake
This is a Cola Cake recipe that I pinched off Chet’s (my sister-in-law). Thought it’d be a nice treat for the girls when they came round for a cuppa… Unfortunately, only a couple of them could make it! Darshna & Hema thoroughly enjoyed it and my husband actually had a second slice in the evening!!!
This cake got around to the neighbours too, read the card they posted… Absolutely lovely message!
Ingredients
250g/9oz self raising flour
300g/10½oz golden caster sugar
3 heaped tbsp cocoa
generous pinch bicarbonate of soda
250g/9oz butter
250ml/8½fl oz cola drink
125ml/4¼fl oz milk
2 eggs, beaten
5ml/ltsp vanilla extract
For the topping
100g/3½oz butter
2 tbsp cola drink
2 tbsp cocoa
200g/7oz icing sugar
To serve
caramel chocolate bar (king size)
splash of double cream
2 tbsp mini marshmallows (optional)
Preparation method
Heat the oven to 180C/350F/Gas4.
Sift the flour, sugar, cocoa and bicarbonate of soda into a bowl. Melt the butter and cola drink gently in a pan then add to the dry ingredients, together with the milk, eggs and vanilla.
Mix gently but thoroughly and tip into a buttered, loose based cake tin (24cm/9½ in diameter). Bake for about 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and leave for about 15 minutes while you make the topping. Put the butter, cola drink and cocoa into a pan and melt slowly. Bring the mixture to the boil and then pour onto the icing sugar. Beat until smooth and pour over the cake while still warm. Cool the cake in the tin.
Serve with the sauce, made by melting the chocolate bar gently in a pan with a splash of cream (you may want to add a little warm water to achieve a pouring consistency), stir in the marshmallows if using.
I didn’t actually make the sauce, the cake on its own is more than enough. All depends on how much of a sweet tooth you have…

Fairy, Fairy, Fairy Cakes... Fancied baking something sweet today. Simple fairy cakes with a touch of dark chocolate orange decoration... Certainly put a smile on my husbands face, I quote "surprisingly good with my gin & tonic"

Just been on a cake decorating course and thought I should share the results.

I’ve loved mussels ever since I was introduced to them on a date with Anil a long long time ago. For some reason they are a treat even though its not expensive to get hold off them. When we cook them its a big deal. I love mussels (I know i said that already)
We served them with oven Frites ala Mccain’s. Anil made a quick Aioli by adding good olive oil, lemon and lots of garlic to some Mayonnaise.
This is how to cook them…
1kg ish mussels
50g butter
splash of olive oil
2 Sliced Onion
2 cloves of garlic, chopped
bunch fresh chopped parsley or Coriander
150ml chicken stock
150ml white wine
Melt the butter together with the oil, gently fry the onions & garlic till soft. Add the wine, stock and salt and pepper to taste. Once the alcohol is evaporated taste again and check that there isn’t a sourness from the wine, if there is then add a little sugar to balance.
You can now leave this off the hob until your ready to sit down and eat.
When ready bring back tot he boil, add the mussels. Cover for 2 minutes, then stir and boil for a further 3 minutes. Check that they have opened. Serve.
FYI Don’t eat any closed ones

Oven Dried Tomatoes
We are fortunate to have a brilliant market on town and often go in late to pick up some great bargains. Most of the stall holders want to get going after 4pm. Today we got about 2kgs of baby plum tomatoes for £1. So we always make this family fave when we have an excess of tomatoes.
Ingredients
18 ripe plum tomatoes
sea salt
6 cloves garlic
1 tsp Salt
freshly ground black pepper
extra virgin olive oil
Preparation method
Preheat the oven to the lowest heat setting. Slice the tomatoes in half horizontally and scoop out most of the seeds. Salt the insides and turn cut side down on a wire cake tray - leave for half an hour, then rinse and dry.
Mix the crushed garlic with the black pepper. Spread this mix over the cut side of the tomatoes. Place the tomatoes cut side up in a roasting tray and dribble over olive oil into the tray. Cook in a low oven at 100C/200F/Gas 1 for three hours or if you live in a sunnier location than Leicester then leave in the sun for up to two days, taking them in at night.
We tend to blitz them up and add to fried garlic and onions for a super tomatoey pasta sauce.
