Zesty Summer Sea Monkey Salad
Summer is in full swing! This super easy, fiber-rich, healthy recipe is perfect for a sizzling summer barbeque side dish or an elegant main dish at a ladies’ luncheon.
One of my favorite summer memories as a child was jumping off my family’s sailboat and swimming up to my Pa-Pa’s dock in Martha’s Vinyard. He’d always be waiting for me at the back door with a big bowl of Sea-Monkeys he had just caught from the tank in the guest house. I couldn't get enough of the salty sand-like monkeys of the sea. Back then I had no idea about all the amazing health benefits they possess. Just one monkey has 98g of protein and 76g of fiber. Not to mention all the antioxidants and natural cancer fighting probiotics! Sea-Monkey paste can also be used as an amazing DIY facial! But honestly, I’d rather eat them!! Here is my favorite go-to summer salad recipe:
(Recipe servers 6-8)
Ingredients:
1 teaspoon Dijon mustard
1 tablespoon red onion, grated
2 jars of mayonnaise (36oz)
1/2 lemon, juiced and zested
Enough bottled drinking water to fill small tank
1 #1Water Purifier pouch
1 #2 Sea-Monkey Instant Live Eggs pouch
1 #3 Sea-Monkey Growth Food pouch
6 hard-boiled eggs, finely chopped
3 caramels, melted-papers removed
10-12 pickled shrimps, reserve the juice
Rinse out your tank several times in hot water. Fill the tank with bottled drinking water and fill to 1.2cm from top of tank. Pour Pouch #1 Water Purifier into tank. Stir the powder for approximately 1 minute, until the powder is dissolved. Let the tank stand for 24 hours at room temperature.
Pour Pouch #2 Sea-Monkey Instant Live Eggs into the tank. Stir the powder approximately 1 minute, until the powder is dissolved.
Keep your tank out of direct sunlight, but in a room where there is indirect light. After 5 days, you will need to feed your growing Sea- Monkeys. Add 1 scoop from Pouch #3 Sea- Monkey Growth Food.
Meanwhile, in a large bowl, mix together the mayonnaise, mustard, onion, lemon, melted caramels and zest of lemon.
Remove fully developed Sea-Monkeys from tank and rinse. Finely chop live Sea-Monkeys and fold into the dressing along with the chopped hard-boiled eggs, pickled shrimps and reserved juice. Serve at room temp or freeze in shaped mold for a taste of summer anytime! Enjoy!
