Turkey Bacon Wrapped Shrimp with Jalapeno Cream Sauce
FOR THE JALAPENO CREAM SAUCE
6 medium sized jalapenos, seeds & veins removed
1/4 cup vegetable oil + 2 tablespoons
1 package of turkey bacon
FOR THE JALAPENO CREAM SAUCE: Start by removing the seeds and veins from the jalapenos and cut into pieces. (Helpful hint: wear food safe gloves while cutting the jalapenos so your hands don’t start to burn)
Next, roughly chop the onion, and peal the garlic.
Heat 2 tablespoons of vegetable oil in a skillet on medium high heat, and once the oil is hot, cook your jalapenos, onions and garlic until they become soft.
Then transfer the contents of your skillet into a blender. Add in the feta, cilantro, and vegetable oil and blend until smooth and creamy.
Set aside in a container and chill in the refrigerator while you prepare your turkey bacon wrapped shrimp.
FOR THE SHRIMP: Peel and clean the shrimp leaving the tails on. Once the shrimp are clean set them aside.
Heat a grill pan (medium high heat) and spray with non-stick spray.
Then lay a piece of the turkey bacon out flat with one end pointed toward your body. Cut in half down the middle and then cut across making four pieces.
Take one cut piece of the turkey bacon and wrap it around the shrimp. Place the wrapped shrimp on the grill pan. Try to put the ends of the turkey bacon face down on the grill pan so the turkey bacon does not unwrap from the shrimp. Cook for a few minutes on each side, until the shrimp turns pink.
Remove from heat and dip in the jalapeno cream sauce. Enjoy!
