Garlic-herb potato salad
GARLIC & LEMON CHICKEN WITH RED POTATOES & GREEN BEANS ~ RE-POST!!
INGREDIENTS
4 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 pound trimmed green beans
8 small red potatoes, quartered
4 chicken breasts
DIRECTIONS
Preheat oven to 400°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the chicken, green beans and potatoes and toss to coat. Pour this mix into the pan and spread around evenly.
Roast for 50 minutes.

Rosemary Potatoes
Serves: 8
Ingredients:
8 small red potatoes, scrubbed & quartered
8 garlic cloves, peeled
3 Tbsp olive oil
1/2 tsp freshly ground pepper
1/3 cup minced fresh rosemary OR 2 Tbsp dried rosemary
1/2 cup chopped green onions
Directions:
1. Preheat oven to 400 degrees F (200 degrees C).
2. Place potatoes and garlic in a single layer in a baking dish. Drizzle with olive oil and toss potatoes to coat evenly. Sprinkle with salt, pepper, and rosemary; toss again.
3. Roast for 30 minutes or until potatoes are crisp on the outside and tender inside.
4. Sprinkle with green onions; serve.
