Nuance is a chocolate shop in Fort Collins, CO. And I go e v e r y time I am in town. I love this place so much. I have had chocolate many places in the US, but this place is the best (I'll admit to a lack of international chocolate experience). But! I thought I would tell you all a little about this awesome small business. After all, they offer shipping (at a steep price) and you can experience it too!

The bread and butter of Nuance is their single origin dark chocolates. Chocolate they make from a single harvest from a single country! This husband and wife team source all of their cocoa beans ethically from all around the world, and take on the entire process themselves with the help of only a few employees. From left to right: (1) roasted cocoa beans that get ground into (2) nibs that get blended into a (3) chocolate liquor that gets (4) refined to the proper particle size. This last jar is what can get melted into bars. I know I am oversimplifying it here, but I am not the expert (they are!).

The result! Single origin dark chocolate bars. Even though each bar is made from the same plant fruit (the cocoa beans) they taste wildly different. The cocoa beans end up with a different flavor profile because they are grown in different soils with different chemical make-ups that impact plant growth and metabolism. They range from very complex flavors like Madagascar (my personal fav) to a more traditional smooth chocolate taste like Brazil. They also make milk, white, and spirit infused (from local Colorado distilleries) chocolate.

Oo! They also make awesome truffles. And they sell "Theobrew" which is cocoa powder mixed with coffee beans. Pretty good stuff.

Okay, so does this tree root look like (1) a dragon or (2) a serpent. I am having a debate with one of my friends, and yes I know you could argue they are similar. But let's not pretend there isn't an important difference.
