In the aftermath of Fukushima disaster had happened in 2011, I have turned into vegan eco-conscious lifestyle along transforming the sense of value out of materialism under capitalism. After some experiences of selling handmade raw chocolate or catering in Japan and Berlin, I moved into Amsterdam for working at Kushi institute in Europe renown to Macrobiotic. As of now, working at vegan&gluten-free pizzeria Mastino V in A'dam, also writer, music producer and DJ.
2011年東北大震災以降、価値観の変容が起こり、完全菜食主義者に。イベントなどでローチョコレート製作販売、ケータリング開始。ドイツ・ベルリン移住のち、2017年、オランダ・アムステルダムのマクロビオティック施設・Kushi insittute of Europeで従事。幾つかのレストランを渡り歩き、現在はビーガン&グルテンフリーピザ屋「Mastino V」で勤務。

A little nice cosy hidden gem offering bio made dishes and beverages not only vegan. I really love this sandwich amusing layer by layer, spicy curry Linsen, grilled aubergine and a lot of greens!
It’s located alongside a canal in Jordaan. I suppose here has long history from the dawn of vegan movement in Amsterdam and warm heart as good as house style dishes.
The combo plate I ordered in the late afternoon was too good enough to fill my emptiness. Sauted seitan with Béchamel sauce, beans and vegetables tomato stew, grilled cauliflower, salad and pilaf. The detail of them evoked nostalgia pleasantly. While eating them, I found out an array of cakes looking worthy of being called Devils’s something in showcase that seduced me to go for.
Fried black wild rice noodle with red cabbage, ginger, sesame and sunflower seed. Adding ‘Mirin’ a bit makes its spicy flavour moderate, and of course it adds Japanese full-bodied taste definitely!
When I participated in the workshop at Kushi institute of Europe, Amsterdam, for the first time. The thema was ‘Quick Brunch for Sunday’.
It was interesting how european represented Japanese macro meal in Bruch way. Basically Japanese loves eating three times in a day as my comprehension... Well, let’s see.
I got to know the excellent arrange which I’ve never thought of it by Valentina who became my boss at the kitchen afterwards. She offered;

After first visit, I’ve dreamed to work at the kitchen of DESHIMA as Japanese Macrobiotic practitioner that would have been able to contribute anything. I tried to email for inquiry of job offer. Then I got a response that was ‘no position so far’ but invitation for their workshop. No sooner had I received the email, then I started to schedule for it. This was the opportunity towards later.
