I really hate the word “resolutions”. I feel like it’s a poor excuse to start something and not finish, then try it again in a year.
I decided why not go all in and start a 30 day Vegan diet 🌱
I started on March 1 st which means that today is Day 6 yay!
I’m not gonna lie it hasn’t been well, easy. I’m usually a eat all except pork kinda gal.
Bare with me as I run down my slight torture thus far 👇🏽
Day 1 was a breeze, my womanly machoness came out quickly. I prepped the fuck out of some fruit salad. Ate some steamed broccoli and cauliflower I got this, how hard can this be? 🤷🏽♀️.
Then Day 2 happened. I woke up hungry as fuck and had no idea what to eat for breakfast. I went to work starving and ate more fruit and some Boy Choy for lunch.
By Day 4: My farts were frequent so I guess I hadn’t quite mastered this meal prepping yet 👀. I was also peeing so damn much. My research (google), showed that veggies have 92 % water. I had no idea. I also wondered, How much fruit and Bok Choy can I really eat? So thanks to an awesome 25 yr + Vegan doctor I work with, I tried quinoa for the first time, not too shabby! I added some avocado to that baby.. yes!
Day 5: Was a lazy kinda day. I picked up a quickie frozen meal from Trader Joe’s. Quite yummy actually. I’m hoping not to make a habit out of it though, you know, preservatives and all.... who am I kidding, it may fall in to at least 1 or 2 of my 24 days left. Good Lord 24 more days 🤦🏽♀️
Brings us to today, Day 6 damn it! I failed at cooking eggplant. So I scoffed on sweet potatoes and of course 🥑. I made a nice fruit salad and I bought a box of mixed nuts from Target.
