so i've been entertaining the idea that these two things (dr. beanies and organ grinder) are the same guy

short answer: beanies killed his past self after fucking up at some point
(like that one rick and morty episode)
long answer:
we know he's (and by extention we've) used his time machine for random bullshit (the entire third act is about that)
additionally, there's this unused part from the scrapped IOU item:
"What the hell is wrong with you!? He's gonna think I'm you!
I can't be stuck with this debt again... You gotta help me man!
Here, take this gun, enter the time machine and kill me on another timeline.
But bring the body back here so we can fake my death again.
No wait, this version of you has no idea what I'm talking about.

(yes it's unused dialogue, but it can still be inferred that he could and would do something like this)
so from beanies' side this isn't out of the realm of possibility, but what about organ grinder?
(most of his personality changes can be chalked up to his brain rotting out of his skull)
he says some oddly specific things as you upgrade him
going in order! (sort of)!

(his inability to properly remember you might just be the short-term memory of having recently met you, OR it could be a memory from further back. it's flimsy and unclear)

addendum2: it'd make organ grinder's pairing with steven in the chaos fight a bit more thematically coherent, which is fun
(the rift is nonsense on purpose, but it's still an interesting choice)
yeah that's the gist of it. organ grinder was probably thrown out once he proved himself to be useless
