I think it’s difficult for someone who wasn’t raised Christian in a majority Christian area to understand how much Christians hate other varieties of Christians. Maybe you have an inkling of the centuries of bloodshed and discourse that has occurred between Catholics and Protestants but after that, different flavors of Protestantism hateeeeee each other. There are sects that are way more adversarial towards other interpretations of the faith (FUCK evangelicals) and others that are chill about it but one of the greatest enemies in the mind of a Christian is another Christian that doesn’t hate the things their own pastor told them to hate. Because you’re making a mockery of God if you don’t think exactly like they do, obviously, and you should know better because you have the audacity to call yourself a Christian.

Overall Review
These recipes are overall pretty good, it's a lot higher quality than I was expecting for a branded cookbook. Though a lot of the recipes use ingredients very specific to the PNW or more specialty ingredients, it's a specialty cookbook. I kind of expected it. A lot of the recipes include substitutions for more easily found items, and as I've continued to make others, I've found ways to keep the final product intact while cutting down on time and dishes.
The binding of the book however is pretty bad, after using it for a year to make every recipe, it's falling apart in multiple places. It's clearly meant for aesthetics over function, as we've seen with many of the recipes photos not being representative of the finished product based on how we're instructed to assemble things.
Overall a better cookbook than expected, not as good as a real cookbook though in terms of actually using it.

They say to serve it on three tiny plates but I hate dishes more than my food touching.
Each of these was delicious. The eggs are just kind of eggs but tasty. The hash browns taste great and this is the first hash brown recipe I've tried where the hash browns actually hold up and don't fall apart. I'll keep using it in the future.
The pancakes are the real star of the show though. The thick and airy batter makes the pile of the pancake really high, and the texture is great. Pancakes often are too dry for me, but I think the yogurt in this one keeps them moist. The rhubarb and blackberry (sorry, no salmonberry in CO) compote was delicious, and balanced out the sweet of the honey perfectly.
This was a really good one to end the quest on :)

I forgot to take pictures, so the first image is of my current cast off stockpile. I keep it frozen in the fridge. The second is my frozen stock, that's about a cup left.

This one is hard to rate because it's very dependent on your scraps. I've made three pots of this throughout the year, and while it makes a lot more than the shrimp stock, it tastes significantly weaker. It's a great low salt version of a store bought stock but like...the reason store bought tastes better is because of the salt. Maybe next time I'll just salt like crazy and update you on if it tastes better.
I just realized that despite making the vegetable stock recipe for a bunch of the recipes I haven't actually posted it or taken a single picture for it. 🙃🙃

I think all of the straight fish recipes have been fine. Like the fish isn't really special, I preferred the fried fish or the stuffed fish, they had more flavor. But it's fish, it's still pretty good. The vegetables were really good and bumped this one up to a 4. I'd recommend prepping a batch of the vegetables, and then you can fridge or freeze them since that's the most time consuming part. Without all the vegetable chopping and stuff this would be a really easy and delicious weeknight dinner.

Okay I didn't like it. But! I think there would be a lot of people who do. I would serve this to my parents and they'd be thrilled. I think it's too much parsley. Overall easy to make and surprised it didn't taste the way bitter greens normally do. Dandelion is just regular bitter, and endive just kinda tastes like any other lettuce.
