Nothing can beat a Parmigiana di melanzane! Eggplant slices passed in the flour and then in a beaten egg (two times!), fried in very hot oil, gently laid in a tray covered with fresh tomato sauce, basil, mozzarella and parmigiano and then an other layer of them, and sauce, and mozzarella, and basil, and parmigiano... Baked in the oven for 15-20 min...that smell you can feel in the kitchen is the most beautiful aroma.
