Ella’s Super Fucking Special & Shamefully Easy Pumpkin Spice Cake Bars

I get asked for this recipe a lot, but I hate giving it out. I give treat boxes of these cake bars as gifts fairly often during the holidays, and I don’t always want to tell people how little time and effort actually went into their gift, lol. Sometimes I go the extra mile to make my own spice cake from scratch, but tbh usually that’s when I’m making it for myself.

The fact is, this is easily the most consistently enjoyed desert that I make, and it also requires the least amount of effort and dirty dishes. I got the recipe from a girl in my lab during grad school, and this is definitely a quick & easy grad school kind of dessert.

Ingredients:

1/2 cup of Egg Beaters* (or ~2 eggs worth or 1 single serve SmartCup) 1 small can pumpkin (or ~2 cups) 1 box spice cake mix 1 bag mini chocolate chips or dried cranberries or chopped nuts (optional)

You will also need: a mixer/beater, a spatula, one large bowl, one 13 x 9 inch glass baking pan**, measuring cups (if necessary), and stuff to grease the pan with (optional).
