Late night sweet cravings but you only really want one blueberry muffin? ( this is not a "healthy" recipe or that smart to eat at 1am but fuck it) 1/4 cup flour 1/4 tsp baking powder 1/8 tsp salt 1 tsp brown sugar Pinch of cinnamon and/ or nutmeg 1 tbsp butter 3 tbsp milk/ almond milk Dash of vanilla extract 1-2tbsp blueberries or chocolate chips Mix the dry ingredients in a coffee cup and then mix in 1/2 tbsp butter with the dry ingredients until there are no big clumps. ( don't microwave butter before mixing with dry ingredients) Pour in milk and I added just a splash of vanilla extract. And mix with spoon, if you need to add a dash more milk to make it not dry do so. Then mix in blueberries or chocolate chips etc lol. Butter a separate mug with the other 1/2 tbsp butter and transfer the mixture in this buttered mug and microwave 60-90 seconds. Ingredients: 6 slices of bread, cut into cubes. 3 eggs. 1 cup milk. 1/4 cup granulated sugar. 1 tsp vanilla extract. 1/2 tsp ground cinnamon. 1/4 tsp salt. 1/4 cup melted butter. 1/4 cup maple syrup.
Instructions: Preheat your oven to 350F 175C and grease a muffin tin. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt. Add the bread cubes to the egg mixture and gently toss to coat them evenly. Let it sit for about 10 minutes to allow the bread to soak up the liquid. Spoon the soaked bread cubes into the prepared muffin tin, filling each cup about 2/3 full. Drizzle melted butter and maple syrup evenly over each muffin cup. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and the tops are golden brown. Remove from the oven and let them cool for a few minutes before serving.
