Plain mochi recipe (Japanese style)

1/2 cup glutinous rice flour 185ml (baby can) coconut milk 1 tsp sugar Generous pinch of salt Corn starch, for dusting

1. Add the rice flour, coconut milk, sugar and salt to a microwave proof bowl, stirring until well combined.

2. Cover with clingfilm.

3. Microwave (900watt) in 30 second intervals for about 2min, stirring in between. The mochi dough is ready when it changes colour and texture from a thick white liquid to a slightly translucent creamy gel that is very sticky.

4. Spoon out the mixture onto a floured surface, coating the dough generously in cornstarch.

5. Divide into little serving size portions, coating each ball with plenty of cornstarch.

6. Enjoy with your favourite cup of green or herbal tea.
