When I came out
they said it could be a “phase”.
As if being gay is a craze.
But my heart is lost in a maze
and, I’ve felt this way for days.
It’s not just a phase.
5 things to think about after getting a haircut:
1. that it's just hair and it will grow back (hopefully)
2. what hat you are going to wear to try and cover it up??
3. that you're not a model (and if you are a model you're beautiful in other ways)
4. that even if you're not a model you're beautiful in other ways
5. nobody actually cares what you look like (and I mean this in a good way)
Packed full of carrots for the Easter Bunny, and topped with a generous handful of mini eggs!! Could this cake BE any more Easter??
Spring has sprung!! And, the big day (in the rabbit community) is tomorrow. So, if you're on the hunt for something delectable to devour with some bunny that you love this Easter. Give this chocolate-infused carrot cake a crack.
Cake Ingredients
400g Brown Sugar
300g Plain Flour
300g Grated Carrots
200ml Olive Oil
100g Raisins
75g Chocolate Chips
50g Walnuts
5 Medium Eggs
2 Teaspoons of Cinnamon
2 Teaspoons of Baking Powder
A Pinch of Salt
Buttercream Ingredients
300g Icing Sugar
100g Butter
100g Cream Cheese
2 Teaspoons of Vanilla Extract
A Pinch of Salt
Firstly, preheat the oven to 180 degrees and prep your tray/tin. I used a cake tin and some liners but you could do it as a traybake or as cupcakes. A great alternative to Easter eggs!!
Then place all of your dry ingredients (flour, baking powder, salt and spices) into a large bowl and combine them together. Add your carrots, chocolate chips, fruit and nuts.
In a separate bowl mix the eggs, sugar and olive oil until combined. Before, pouring into the bowl with the flour again stirring until combined.
Pour the cake batter into your tray or tin, make sure that it is spread evenly!! Then bake for 35 to 45 minutes.
Once, baked leave to cool in the tin for 20 minutes before hopping it onto a wire rack to completely cool.
Using an electric mixer (on medium speed) mix the butter and cream cheese, until smooth and creamy.
Then add the icing sugar, vanilla extract and pinch of salt and mix again until fully combined. It should be fluffy like a little bunny!!
Then spread all over your cake (and inside if you are doing it Victoria Sponge style). And, sprinkle as much chocolate as you like on top. It is Easter after all!!

Schools back in session!!
It's the first day of a new term and I already feel the need for another holiday. Roll on the weekend!! 😂
But in all serious the news that schools are re-opening is nerve racking. On top of the normal school stress and not to mention the uncertainty regarding exams.
So, make sure to have some you time throughout the week. Whether that is a coffee break, a relaxing soak or a digital detox on the weekend. Take care of yourself!!
right now there is lots of anxiety
and feelings of uncertainty.
but it will work out you see,
because one day we will be free
no more sitting on the settee
or endlessly watching tv -
we will go to the sea,
we will be happy...
