It's Raphael's name day today. We have brought him to his church that he is named after... Such a lovely place and Raphael loves to come and light a candle then have lunch in Latchi after at the play area. We also lit a candle for my beautiful friend today. One of my oldest friends. We may not have been as close in recent years but she always made a special impression on my life and my heart. You would literally not find a single person to say a bad word about her. So, after opening my front door to a beautiful rainbow, I stopped at the traffic lights to this.... The dark, dreary and grey concrete jungle overlooked by the blinding sunlight shining down its rays as it peeps through the clouds onto the tiny strip of bright blue sky... Well!! Finally got round to making these. Soft cookies are THE BEST!! Tried out @estergram_07 's recipe and it's YUM! My usually recipe doesn't have brown sugar and doesn't use the left over celebrations! Mandria is renowned for it's peanuts. Almost all the fields in mandria are sewn with peanuts seeds in season. There is even a festival every year where there's music, food and with your ticket you get free bags of the peanuts from that years crop! The agricultural machines do the harvest and then the local farmers let the villagers just go and hand pick whatever is left. It's one of my favourite things about living in Cyprus; that Raphael gets to grow up in touch with an outdoor life and learn about where things come from, how they are grown and what happens to them before they reach your plate!
