We were at a privately owned ranch next to las Pirámides de la Cańada de la Virgen. They gave us a farm to table meal using indigenous ingredients, such as black corn and nopales. Everything was made from scratch, including the cheese. Their crows produce milk so thick it isn’t drinkable, so they specifically make cheese with them. A big frustration I hear from people is that Mexican food isn’t healthy or good for you. Just like any ethnic food, it is very nutritious and as a matter of fact Mexican indigenous food is one of the healthiest diets in the world. It is usually confused with processed Hispanic foods, “Tex-Mex” restaurants, and of course, Mexican food made with artificial and hormone- filled ingredients.
