Lemon Oatmeal Iced Tea Cookies are a delectable combination of tangy lemon, hearty oatmeal, and nutty flavors, enhanced with iced tea essence. These cookies are ideal for a summer treat or whenever you want a unique and refreshing twist on traditional oatmeal cookies.
Ingredients: 1 cup rolled oats. 1 cup all-purpose flour. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1 egg. 1 teaspoon lemon zest. 1 tablespoon lemon juice. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/4 teaspoon ground cinnamon. 1/2 cup chopped nuts e.g. almonds, walnuts. 1/4 cup raisins or dried cranberries. Iced tea for soaking.
Instructions: Put the all-purpose flour, baking soda, salt, ground cinnamon, and rolled oats in a bowl and mix them together. Melt the butter and mix it with the white sugar and brown sugar in a different bowl until the mixture is light and fluffy. Add the egg, lemon zest, and lemon juice and beat until everything is well mixed. Slowly add the dry ingredients to the wet ones, mixing only until everything is combined. Add the chopped nuts, raisins, or dried cranberries, and mix them in. Put the dough in the fridge for at least an hour with the lid on. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Take tablespoon-sized pieces of dough and roll them into balls. Put them on the baking sheet that has been prepared and slightly flatten them. After the oven is hot, bake for 10 to 12 minutes, or until the edges are golden brown. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. Before you serve the cookies, make some strong iced tea. Take a moment to dip each cookie into the iced tea and let it soak up the flavor. Put the wet cookies on a wire rack to dry for a few minutes.
