Shredded Buffalo Chicken Sandwiches
Good evening everyone! This is my first posting of something that I have made, and I am so excited to share it with you guys! It is something that is so easy, seriously a ten year old could do it. Or your husband too...Whichever ;) I found this recipe while browsing Pinterest about a year ago? Maybe less. But ever since I had made it some time ago and it has been a habitual dinner in the Smith home. Sometimes I don't feel so creative, so the little push of inspiration that Pinterest gives me, helps a lot! Let me tell you, it has actually helped me become more risky when it comes to trying out new things. Usually when I make a list for the grocery store I have atleast 4-5 things on that list for making things that I have never cooked before. I have come a long way from being that newly wife that used to only cook hamburger helper! Haha! So let's dab into this, shall we? This recipe calls for VERY little ingredients. In most American homes, you will probably find them lying around in your fridge or pantry from everyday things that you pick up from the store. Only needing three ingredients to MAKE this, is what drew me into this. Because of how simple it was. Never judge simple meals. They can be the most delicious. So you'll need THREE things.
Texas Pete Buffalo Wing Sauce, a Ranch Seasonings Packet and of course:
CHICKEN! Yep, that's it. You just need those three things to make this. The other things you may pick up, are just things to perfect your sandwich. I put three chicken breasts in here. It's just me and my husband, and yes we do have left overs but usually only for 2 maybe 3 more sandwiches. So if you have a bigger family, may want to put 4-5 chicken breasts in the crockpot :)
So what you're going to do, is in a shallow dish, put maybe a cup to cup in a half of texas pete into it. (it really doesn't matter cause we are going to add more sauce later.) Pour the Ranch seasoning packet into it and mix it. Should look along the lines of this:
Don't worry about it not being perfectly dissolved. Just mix it the best you can. The crock pot will dissolve the rest. Once this process is done you're going to go over to your crockpot and pour it over your chicken.
Doesn't seem like it's very saucy huh? That's why I said don't worry if its not a lot. Cause we about toooo add some moooore sauce! ;]
Yumm! Don't be stingy with your sauce. You're going to use it trust me.
Now set your crockpot on low, and cook from anywhere from 4-6 hours. Careful though, you don't want to cook it too long and the chicken turn out dry. So I suggest checking on it a few times, to flip it over and if you're able to easily pull it apart, then it's time to stop cooking.
This is what my chicken looked like about 3 hours in. It was done cooking at 5 hours. And that's when we started shredding! So get yourselves two forks and start the process. Once you're done should look something like this:
It doesn't have to be completely shredded, we kinda mix it, some shredded pieces are thin... some are chunky. Just makes for a more fun eating experience in my opinion. So now that we are done cooking it, it's time to assemble the sandwich!
These are my extra ingredients that I personally believe makes the "perfect" sandwich. -Lettuce -Pepperjack cheese -Tomato -Deli sandwich bread Of course you can make your sandwich however you want. This is just what I typically make for my buffalo chicken sandwich!
This is what it looks like all assembled. For the very last step, and this is totally optional. I just prefer my cheese melted. So I put my oven on a broil and put my sandwich in there for two minutes. The end results look like this:
Is your mouth watering? Cause I just ate this literally 20 minutes ago, and my mouth is already watering again. Oh the joy of leftovers! I also drizzled the top with ranch.
