Spaghetti Squash Keto Pie
Ingredients:
1 medium squash 1 large zucchini 2 cups tomato sauce 1 small onion, chopped 3 eggs ½ cup parmesan cheese 2 cups mozzarella 1 cup ricotta cheese 3 tbsp olive oil Salt Black pepper
*Cut the spaghetti squashes in half lengthwise and lay on a baking sheet. Sprinkle it with salt, black pepper and oil and bake for 40 minute at 400F. * In the medium skillet, heat oil, add zucchini, fry on one side for 3 to 5 minutes, until golden brown. Flip over and fry on the other side, remove to paper towels to drain, and sprinkle with salt. Repeat the process. Set aside. *Heat a teaspoon of oil in the skillet, over medium heat. Add onion and cook for 7 to 10 minutes. Cool it. *In a large bowl, stir together onion, half of parmesan, ricotta, eggs, salt, black pepper. *When the squash cooled slightly, run a fork inside, to shred it into “noodles”. Place squash in a colander over the sink or a bowl, and press out as much water as you can. *Add squash noodles to the ricotta mixture and combine very well. *Spread squash mixture into the prepared pie plate. *Top squash with fried zucchini. *Then gently spread the tomato sauce over the zucchini. *Top with mozzarella, the remaining parmesan, and black pepper. *Bake for 30 minutes at 375F, until bubbly and cheese is melted.
Keto Cauliflower Cakes with Ham and Green Onion
Ingredients:
Ingredients: 1 head Cauliflower 2 Eggs 1 cup Turkey Ham, sliced ½ cup Chives (green onion), chopped ¼ cup melted Butter Nutmeg Salt Black pepper 1/2 cup Parmesan cheese Olive oil * Cut cauliflower into small pieces, place in a deep saucepan well covered with water. Add salt. Bring to a simmer and cook for about 15-20 minutes, until very tender. * Strain cauliflower using a colander and set aside to drain thoroughly. * Using a masher, mash the cauliflower in a mixing bowl. * Melt the butter in the microwave and pour into cauliflower mash. * Add sliced ham, chopped chives, grated nutmeg, pepper, eggs, ¼ cup Parmesan cheese, mix well. * Line a baking tray with parchment paper. Using a spoon, scoop out some cauliflower mixture and fill it with the cutter. * Top with remaining Parmesan cheese, and drizzle olive oil. * There should be 8-12 pieces. * Bake for about 15-20 min at 430°F or until golden brown.

Ingredients: 4 cups chicken broth 1/2 medium head of cabbage, shredded 1 small onion, chopped 1 small carrot, chopped 1 medium zucchini, chopped 3 celery stalks, chopped 3-4 slices fried bacon 1/4 cup butter Salt Ground pepper, peppercorn 1 Bay leaf 1 cup heavy cream Fresh Dill for garnish
Make homemade chicken broth. In a large pot, bring to a boil the chicken broth. Add cabbage, reduce heat and simmer for 10 minutes. Then add zucchini and celery. Cook for 5 minutes. In a skillet, melt butter, add onion and cook for 3-4 minutes. Then add carrot and saute for 2-3 minutes. Add cooked onion and carrot to the large pot, simmer for 2 minutes. Add fried bacon, bay leaf, black pepper, simmer for about 2 minutes. Add heavy cream, and heat for 2 minutes. Garnish with fresh dill.

5 eggs
1tsp vanilla extract
3tbsp stevia ( or your favorite sweetener)
2 cups almond flour
2 tbsp coconut flour
1 1/2 tsp baking powder
3 tbsp heavy cream
3 tbsp melted butter
1 cup blueberry
Bake for about 45-50 minutes at 350F
Ingredients The Dough: 1 1/2 cup Mozzarella Cheese 3 Tbsp Cream Cheese 1 Cup Almond flour 2 Eggs
The filling: 3 tbsp tomato sauce 2 tomatoes 8 slices mozzarella cheese Salt Black Pepper Italian Seasoning Sesame seeds (optional)
✓ Mix the shredded mozzarella and cream cheese in a large bowl. Microwave for 90 seconds.
✓ Add the beaten eggs and almond flour.
✓ Knead with your hands until a dough forms.
✓ Spread the dough flat into a rectangle shape on parchment paper first using hands and then the rolling pin between 2 sheets of parchment.
✓ Spoon the tomato sauce onto the center of the sheet, lengthwise, then put sliced tomatoes, mozzarella, sprinkle salt, pepper, Italian seasoning.
✓ For preparing the braids, make ½” slits using a pizza cutter or a knife on both sides of the leaving a ½” space from the filling. ✓ Brush the braids with egg yolk and sprinkle sesame seeds on top.
✓ Place it on your baking tray by lifting and transferring the parchment paper.
✓ Bake for 15- 20 minutes at 420 F until golden brown.
