Day 2 Daube de Porc after a lengthy marinade in red wine with mirepoix the pork shoulder has gained both in complexity & tenderness. Searing the meat edges adds toasted flavors that after 3 hours of very slow braising mellow. Although the cooking is finished on Day 2 it is important to allow the Daube to "bloom" one more night.
