All LINED UP Tonights dinner Sweet potato gnocchi #gnocchi #pasta My first attempt at gnocchi last night and i decided to bake my sweet potato instead of the more traditional steamed. The rough idea: 1) Preheat oven to 170 °C 2) Cube sweet potato and bake until soft. 3) Mix sweet potato with an egg and flour and mix well. 4) Continue to knead and add flour until a dough is formed. 5) Roll dough to sausage shapes and cut into 2 cm pieces. 6) Add to boiling water with salt and cook until they begin to float. 7) Mix through your sauce or cover in burnt butter and enjoy. Tips I only used one and a quarter sweet potatoes. It probably wasnt enough potato for the flour and egg i would use atleast 3. Add your flour slowly so as to not get to doughy.
