You need to give him a period to adjust to this. A long period in all honesty. Because his deals were made out of his sheer will, not because of forcing circumstances
What is going to happen to his worms when he's gone? Actually, the mere thought of impending death terrifies him. He didn't have to think about this in centuries. Or about sleeping. Or eating. His interest and main priority remain his worms.
He might be a little snappy, even towards you, but you need to have patience with him and take things slowly. And be prepared for a lot of breakdowns as his humanity starts settling in again.

He wasn't so far gone as the rest so he doesn't need help adjusting to sleeping, eating etc because he still needed them anyway
Nadia mentioned that before his deals Valerius was obnoxious, but never cruel, so it's safe to assume he will be like that again. Which means all the things he's done will take a toll on his mental health and you need to be there for him.

They come back after some time, when their humanity takes over, and apologize, sharing their fears with you. They count on you to protect them, at least until they learn how to deal with all this.

Seems oddly calm in the beginning, it is what it is after all, they will figure out something, they always do. Then they realize they don't really have a solution for this. The Devil is incapacitated and they're pretty sure Death wants nothing to do with them after they nearly annihilated the Arcana...
They have one major breakdown, after a few days, and it's major. All things come at once. They suddenly feel emotions again, after thousands of years they now face the imminence of death, the gravity of what they have done all this time falls on them like a brick.
They need you. You're like an anchor for them now. The only person who doesn't hate them and they need to feel that so they don't break down completely. This one actually needs you to teach them how to eat, sleep and perform other basic necessities again because they are so used to not having to do them.
"I spent millenia thinking I was doing this for science, when in truth I strayed so far away that I ended up doing it for my pure sadistic pleasure. There was nothing left of me in whatever was that person I became. And I know I have no excuse for my actions but, MC, please, at least you have to tell me that you forgive me."
