Pasta with Mushrooms and Mascarpone

I made this for dinner last night, with bucatini left over from the Great Bucatini Inquiry, and it was pretty tasty so I thought I’d share the recipe here. I was looking for a recipe to use up the cream and mascarpone I’d bought in order to make mushroom ravioli, since the mushroom ravioli recipe only uses a few spoonfuls of cream and about a quarter of a package of mascarpone. 

I did a half-recipe and added a bunch of garlic, because it seemed short on seasoning, and I think that was a good call. I also did it one-pot since I only have one burner; basically I cooked the pasta, drained it (catching enough pasta water for the sauce) and then left it in the colander while I wiped out the pot and used it to cook the breadcrumbs and mushroom sauce. The pasta dried out and cooled slightly, but that allowed it to absorb a bit of the sauce more than fresh hot pasta would, at least in my opinion. 

In other pasta news, the podcast The Sporkful is doing a four-part series right now called Mission ImPASTAble, about host Dan Pashman’s quest to design the perfect pasta and get it made and distributed. Parts one and two have been released and they are charming and also provocative if you have strong feelings on noodles.

@copperbadge I’d recommend adding some thyme to this next time, too, depending on how your tastebuds handle the stuff. Mushrooms and thyme are BFFs.

Woke up early and moved to the sofa so I wouldn't keep Hubs up. I've been watching the sun rise over the last hour, and I'm reminded of how grateful I am for the time I spent growing up at Grandma and Grandpa Hancock's farm. They gave me a fearlessness and respect for gardening that has enriched my life more than I will probably ever fully know. Also, I'm convinced sungold tomatoes are mutant alien spawn, because that sucker is officially over 5'7" at this point. And growing in a 12" pot.
