Rice-cake pizza
A lot of people are sleeping on the versatility of rice cakes ( I was one of them once). They're the perfect base for light snacks! You can go sweet or savoury depending on you mood.
Here's my take on rice cake mini pizzas!
Ingredients ( per 4 cakes)
- 4 rice cakes
- 6 tsp mozzarella cheese
- - 1tbsp tomato paste
- 1/2 tsp oregano
- 1/2 tsp Italian seasoning
- 1 mushroom
- 1/4 or less of a bell pepper
Instructions:
- preheat oven to 180 degrees celsius
- thinly slice vegetables
- mix tomato paste with seasoning and add in 1/4 tsp water to make it smoother
- apply sauce to cakes
- top with veggies
- add in 1tsp and a half of cheese per cake
- leave in oven for 5 minutes or until cheese is melty
Total calories of pizza: 155
Per cake : 38.75
A great snack if you're craving pizza but don't want to indulge!
A sweet take is to spread some peanut-butter and plop some jam and bake for the same time. It gives it a cookie like flavour!
That would be around 55 calories per cake I believe
