Need Writing Advice

Can anyone recommend fun reading/writing exercises that can help improve my ability to write a handwritten essay on any topic I like?

I noticed a few problems particularly when I'm making a handwritten essay: 1. I'm so slow when writing. 2. My mind goes blank and I stare at my wall for long periods of time. 3. I don't know how to structure my essay. 4. I fumble with my words. 5. I'm generally more lost than when I'm using my computer to write the essay. I want to improve doing my essays by hand because I don't want to be completely dependent on my computer. And my handwriting has suffered throughout many years of typing.
