This spicy green tomato relish is a burst of tangy and sweet flavors with a kick of heat. It's perfect for adding a zesty twist to sandwiches, burgers, or as a condiment for vegan cheese platters.
Ingredients: 6 green tomatoes, diced. 1 red bell pepper, diced. 1 green bell pepper, diced. 1 onion, finely chopped. 3 cloves garlic, minced. 1 cup apple cider vinegar. 1/2 cup brown sugar. 1 tablespoon mustard seeds. 1 teaspoon ground turmeric. 1 teaspoon ground ginger. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon red pepper flakes. 1/4 teaspoon cayenne pepper.
Instructions: Put all the ingredients in a large saucepan and mix them together. Over medium-low heat, bring the mix to a boil. Turn down the heat and let the mixture simmer for about 30 minutes, stirring every now and then, until it gets thick. Take it off the heat and let it cool down. Put the relish in clean jars and make sure the lids are tight. You can keep it in the fridge for up to two weeks.
