This Basmati and Wild Rice Pilaf is a nutritious and flavorful vegan dinner option. Basmati rice adds a fragrant aroma and light texture, while wild rice brings a nutty flavor and chewy texture. Combined with sautéed vegetables and almonds, this dish is both satisfying and wholesome.
Ingredients: 1 cup basmati rice, rinsed. 1/2 cup wild rice, rinsed. 2 cups vegetable broth. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 carrot, diced. 1/2 cup green peas. 1/4 cup chopped almonds. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Warm up the olive oil in a big pot over medium-low heat. Add the minced garlic and diced onion and saut until the onion is fragrant and clear. Then add the wild rice and basmati rice. Stir the rice to coat it with the oil, and toast it for about two minutes. Add the vegetable broth and boil it. Turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until the rice is done and the liquid is gone. Add diced carrot and green peas in the last 5 minutes of cooking. Use a fork to fluff the rice after it's done cooking, and add salt and pepper to taste. Mix in the chopped almonds. Before serving, sprinkle with fresh parsley.
