Aunt Bee's Recipes has a quick and tasty Instant Pot Chili Con Queso recipe. This is great for parties or a cozy night in!
Ingredients: 1 lb ground beef. 1 small onion, finely chopped. 1 red bell pepper, diced. 1 can 15 oz black beans, drained and rinsed. 1 can 10 oz diced tomatoes with green chilies, undrained. 1 cup frozen corn. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/2 teaspoon dried oregano. 1/4 teaspoon cayenne pepper. 1/2 cup salsa. 1 cup shredded cheddar cheese. 1 cup shredded Monterey Jack cheese. 1/2 cup cream cheese, softened. 1/4 cup chopped fresh cilantro. Tortilla chips for serving.
Instructions: Set Instant Pot to saut mode and brown ground beef. Add chopped onion and diced red bell pepper, saut until softened. Stir in black beans, diced tomatoes with green chilies, frozen corn, cumin, chili powder, garlic powder, onion powder, dried oregano, cayenne pepper, and salsa. Lock the lid and set Instant Pot to high pressure for 5 minutes. Quick-release pressure and stir in cheddar cheese, Monterey Jack cheese, cream cheese, and chopped cilantro until melted and well combined. Serve the Chili Con Queso with tortilla chips and enjoy!
