I had a really great day today. My hair was fly. My work dress was legit. I laughed with my co-workers and I got shit done. I will cap off this day of good with ridiculous teen television and a burrito bowl from Chipotle. When a good day happens, especially after a string of shitty ones, pause and thank the universe for the reprieve.

Tonight’s Yummy Vegetarian Dinner!- “Grown Up Grilled Cheese”:

Ingredients:

-Sliced Zucchini, Red Onion, Fire Roasted Bell Peppers, Sliced Firm Red Onion (seeds removed)- season veggies with salt, pepper and garlic powder,

-Avocado Spread (Mashed Avocado with Salt/Pepper/Olive Oil), One Loaf sliced lengthwise of Bakery Sourdough or Italian Bread, brushed with Olive Oil and Oregano and sliced Fontina/Asiago Cheese (trust me on the cheese choice- soooo good)

Grill Veggies, top bread with avocado spread, add cheese, bake open faced for 10 mins on 350- slice into sandwiches and serve!

ENJOY! Sooooo flippin delicious!
