A little helper in the Gardenia plant.

This is a Gardenia bush that has overgrown over the years. It is one of the few bushes still producing a few slightly spicy smelling flowers starting in February into October. I am trimming it to make it more manageable and keep it from growing over onto the pathway, so the pool man can easily walk to the pool with his supplies. I plan to do a lot more downsizing once the flowers stop blooming, so it will be easier to take care of. ( as long as it is maintained )

Baking Experiments

Refreshing

The first time I dyed my hair was red, many years ago. I always love this color, I thank the Goddess Dawn for inspiring my fondness of it.

P.S. It only cost $6 for shipping, because someone harassed me relentlessly so I got the color for free as compensation. :D

I made some Anpan, Japanese sweet red bean bun. They were a pleasant slight sweetness with some roasted sesame seeds on top that complimented the overall sweet yet slightly savory flavor of the bun. It was rather delicious and I will save this one for future use.

Dough Ingredients

2 cups All purpose Flour

¼ cup sugar

1 tsp kosher or sea salt

1 tsp active dry yeast

1 large egg

3 Tbsp whole milk

3 Tbsp water

2 ½ Tbsp unsalted butter (cut into small cubes)

Filling

10 oz red bean paste

Topping

1 large egg

2 Tbsp water

2 tsp toasted sesame seeds

Warm milk and water to 86ºF , mix in active dry yeast, and allow it to activate/become foamy - about 5 minutes.

In a large mixer bowl add the flour, sugar, salt, beat egg separately then add to the dry ingredients. Add the warm milk, water, yeast mixture and mix for a few minutes on lowest setting or by hand. Mix for 10 minutes then add the butter in small amounts, kneading in until the dough absorbs the butter fully and becomes smooth. Should pass window pane test for gluten development and be smooth now. Ready for the first proofing to double the size, cover bowl in plastic/towel and keep warm for 1 - 2 hours.

Deflate, fold the dough twice and roll it back into a ball, cut into 8 pieces, fold each of those and make into smaller balls, allow them to rest for 15 minutes, then flatten them out again and add a generous tablespoon of red bean paste into each one. Pinching close the bottoms and setting them on a parchment paper lined pan to proof for another 15-30 minutes. (we want them to double in size)

After they have doubled in size, brush on the egg wash over the tops of each bun, then sprinkle sesame seeds on top.

Bake in oven at 400ºF for 13 minutes. Cool a few minutes on cooling rack and serve warm. ❤
