Ingredients: 1 whole turkey 12-15 lbs, thawed if frozen. 1/2 cup olive oil. 4 cloves garlic, minced. 2 tablespoons smoked paprika. 2 tablespoons dried thyme. 2 tablespoons dried rosemary. 2 tablespoons dried sage. Salt and black pepper to taste.
Instructions: Prepare your smoker according to manufacturer's instructions, targeting a temperature of 225F. In a small bowl, mix together olive oil, minced garlic, smoked paprika, thyme, rosemary, sage, salt, and black pepper. Pat the turkey dry with paper towels and rub the spice mixture all over the turkey, including under the skin and inside the cavity. Place the turkey on the smoker grate breast side up and close the lid.
