These cheesy cauliflower breadsticks taste great and are good for you if you are on the keto diet. They are low in carbs and taste great because they are made with cauliflower rice, eggs, and cheese. You can eat them as a snack or an appetizer with marinara sauce on the side.
Ingredients: 1 medium head cauliflower. 2 eggs. 1 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1 teaspoon dried oregano. 1/2 teaspoon garlic powder. Salt and pepper, to taste. Marinara sauce, for dipping.
Instructions: Turn on your oven and heat it up to 425F 220C. Put parchment paper on the bottom of a baking sheet. To make cauliflower rice, cut the cauliflower into florets and pulse them in a food processor until they look like rice. Put the cauliflower rice in a bowl that can go in the microwave. Microwave on high for 5 to 6 minutes, or until it gets soft. Move the cauliflower to a clean kitchen towel and let it cool down a bit. Try to squeeze out as much water as you can. The cauliflower rice, eggs, mozzarella cheese, Parmesan cheese, oregano, garlic powder, salt, and pepper should all be mixed together in a large bowl. Mix everything together well. Spread the dough out into a rectangle shape that is about 1/4 inch thick on the baking sheet that has been prepared. Put it in an oven that is already hot and bake for 25 to 30 minutes, or until it is golden brown and firm to the touch. Take it out of the oven and let it cool down for a while.
