What is your take on how the piglins turn into zombie piglins?

SO, I’m cheating a little and changing it… just that it takes much longer for the zombiefication/mutation to begin. About half a day perhaps. Maybe longer depending on the Piglin’s strength and health.

And it begins gradually, first with green growths, then with nausea kicking in, and finally with the growths beginning to eat away at their flesh and the mind deteriorating until boom- point of no return. Full zombie.

BUT if returned to the Nether in time (preferably before Nausea kicks in), the zombification will cancel and the growths will stop and heal.

Upon the point of no return, there’s no cure.

And all Piglins are well aware of this.
