Raw Oriental Noodles
Serves 3 - 4
Ingredients:
2-3 large zucchini 1 cup julienned or grated carrots 1 cup thinly sliced red cabbage 3 green onions sliced on the bias 1/2 cup chopped cilantro 1/4 cup sesame seeds
Dressing:
4 tablespoons sesame oil 2 1/2 tablespoons brown rice vinegar 1/3 cup tablespoons lime juice 1 to 2 dates(soaked for 20 minutes and drained) 1/2 to 1 teaspoons chili pepper 1 to 2 teaspoons grated fresh ginger 2 to 3 cloves garlic, crushed
Preparation:
1. Using a spiralizer make “noodles” with the zucchini. You could also use a vegetable peeler lengthwise to make long flat noodles or julienne peeler.
2. Place the noodles, hijiki, carrots, shredded red cabbage, sliced green onions, chopped cilantro, and toasted sesame seeds into a large bowl.
4. In a blender, mix together the ingredients for the dressing in order listed till smooth. Pour the dressing over the salad and toss well. Top with sesame seeds and serve.

Chocolate Hazelnut Spread... healthy nutella.
Who doesn't like to treat themselves to chocolate now & then? I sure do...only if it's raw or is made out of something you would never guess wasn't chocolate or healthy foods..If that makes sense o_O Here is an amazing recipe for chocolate hazelnut spread...nutella perhaps? It's also great to make with any other nuts of your choice...
Ingredients: 2 cups hazelnuts, or whichever nut you prefer 1/2 cup almond milk 1/4 cup powdered raw cocoa 1/4 cup maple syrup/raw honey 1 tbsp coconut oil, melted 1/4 tsp salt
Directions
In a food processor, process nuts until butter smooth. Add in other ingredients & mix until creamy & uniform. (this might take some time) Store in air tight container in the fridge.

yam noodles with sweet sauce, marinated mushrooms & sesame seeds: serves one
marinated mushrooms:
4 mushrooms
1 teaspoons sesame oil (optional but recommended)
1 teaspoon tamari
sweet miso sauce:
2 tablespoons of nutritional yeast
1 tablespoon agave/maple syrup/raw honey
1 tablespoon miso
1 tablespoons hummus (not raw, too bad)
1 peeled garlic clove
2 tablespoons mustard
3-5 tablespoons water, as needed
1 tablespoon sesame seeds
Yam noodles:
1 peeled yam
To make the mushrooms: slice them really thin then rub in the oil and tamari. Put them in a warm spot (I put them in my oven at its lowest temperature) and forget about them for a minute.
To make the sauce: blend all ingredients except sesame seeds together until smooth. Add whatever else you want. Then toss in the sesame seeds by hand. Set aside.
To make the noodles: put the yam through your spiral slicer (spirooli) or slice on a mandolin Then cover them with the sauce and them get to know each other for a few minutes. The noodles will soften and pick up more flavour. Now remember your marinating fungi friends being warmed somewhere? Add those on top, and sprinkle on some more sesame seeds and raisins. Yum. Yams, man.

Radical Raw Pad Thai: serves 2, more or less
Sauce:
1 Tb tamarind paste
1 Tb chopped ginger
1-2 cloves chopped garlic
1-2 Tb agave (or 1-2 dates)
6 Tb tamari
2 Tb chili sauce
3 Tb tomato puree
1 t chili flakes
Juice of 1 lime
1/2 t coriander
1/2 t paprika
Pinch of cayenne and chili, if you want it hotter =)
Raw oil, if desired
Water, as needed
Pasta:
1 large zucchini
Garnish:
Cilantro
Raw jungle peanuts!
Bean sprouts
Hot sauce
Scallions
Marinated mushrooms and broccoli (put some tamari on and warm for an hour in the dehydrator)
To makes the sauce, put all ingredients in blender and add enough water to just cover them. Blend until smooth, see if you want more heat, or anything else.
To make the pasta, slice the zuc on a mandolin or spiral slicer. Add enough sauce to evenly coat the noodles. Garnish. Eat! The heat of the chili makes this dish perfectly warming on its own - no heating necessary.
This middle-eastern inspired salad is a very flavorful and cleansing raw dish that can be enjoyed as a meal or a side dish. Perfect for those wanting a gluten free alternative to the traditional tabouli salad made with bulgur. Enjoy!
Roberta’s Raw Tabouli Salad
Serves 4-5
Ingredients
Dressing
1 clove garlic 3 cups sprouted quinoa ¾ -1 cups lemon juice (if you want it tart, go with 1 cup) ½ cup olive oil 1/2 cup fresh mint leaves 4 cups flat Italian parsley
Salad
1 hothouse cucumber – chopped 10-12 cherry tomatoes – cut into small pieces 1/3 c pine nuts 1/3 cup red onion – finely chopped 1 cup chopped spinach 1 tsp salt
Preperation
In a food processor fitted with S blade drop in garlic with blade running to minced. add the rest of the dressing ingredients and pulse a few times until parsley and mint leaves are chopped.
Transfer to medium sized mixing bowl and add salad ingredients. Mix all ingredients until well tossed.
Garnish plates with red leaf or mixed lettuce. Top with the tabouli. Add avocado slices on the top and enjoy!
