Recipe – Farmhouse pickles by Mike
This recipe is a general ‘all rounder’ pickle recipe, suitable to pickle almost any kind of vegetable. Including; carrot, baby beet, green tomatoes, cauliflower, zucchini, radish, wombok, baby onion, brussel sprouts, red radish.
Ingredients:
2 Litre apple cider vinegar
1 kilo castor sugar
1 cup coriander seeds
1/4 cup yellow mustard seeds
1/4 cup black mustard seeds
1/4 cup fennel seeds
Method: Chop your selected vegetables into small pieces. The smaller they are the quicker they will pickle. Place into sterilized jars.
Place all ingredients (including spices) in a saucepan and bring them to the boil. Once it reaches the boil, turn off the heat and then allow it cool.
Cover the vegetables with the vinegar mixture, seal the jars and allow them to cool completely before checking the seals & storing.

When are you using it - do you need it ripe it or firm?
Product use - Are you juicing or presenting this produce? 1sts or 2nds? Clarity about the use of the product will give you the best result (and the best value)
Size does matter! Specifications can be as detailed as you like, but remember "the size of my thumb" is hard to quantify. Try to use a more specific measure.
Precision of Quantity - how much do you need….exactly?
Seasonality – Buying products in season is always best - they have the best flavour & are most likely to offer better value.
Finally…what time do you need the delivery?
