Products and ideas surrounding eating, health and wellness that seem like a 1970s flashback (think turmeric and aƧai bowls) have gone mainstream.
As a nutrition freak, and a product of my generation, I am happy to see more plant-based food restaurants popping up all over the US.Ā
There are two sides to the sustainability coin that I donāt believe were mentioned in the article. One, that turning to plant-based meal plans allows consumers, and even restaurateurs to grow some ingredients onsite, year round. Two, many of the more trendy options appearing daily are not sustainable, e.g. almond milk, avocados (unless you grow your own tree at home), and quinoa, to mention a few.Ā
Its a double-edged sword for sustainability, but an excellent improvement for dinersā immediate enjoyment.
