PM: Hey Kitten.. Quick cooking question, but well, any tips on how not to burn muffin mix? I mean I can never time it right and it always ends up on one extreme.
Well it depends on what kind of mix you’re using. I always add just a bit of applesauce (but you can use vegetable oil if you’d rather. no difference in taste) to the batter and then I spray the pan with baking spray. If you don’t have that, you can use olive oil and flour.
For a dark pan, I always put the oven on 325 degrees and then for a light pan, I set it at 350 degrees. From there I let them bake for about 12-15 minutes but I start checking them at minute eight since some batters cook faster than others. Take a clean toothpick and stick it into one of the muffins. If it comes out with batter on it, stick it back in for two more minutes. If it comes out dry, they’re done.
Since you’re testing, I would use paper cups in the tray. They’re a lot easier to get out once they’re done cooking and are a lot less messy.
Ducks. Do you have a muffin pan? The ones with anywhere from 6-12 holes in them. I’m sending over some of my baking cups. They’re re-usable so if you screw up, you won’t ruin the cup.

Uh, if I'm honest... Not really, Sir. I was kinda really nervous about it all; in fact you can ask Master, I nearly vomited right before going on for my portion. Still, I know he's really good at all that stuff, but I'm getting better and I'm definitely gonna put up a good fight! It's not a competition, but I'm winning...
