Good wood - damn I just can’t seem to ween myself off these tiny houses…. and what’s more they just keep getting better and better… Encompassing 357 square feet (33 square metres), ‘The Drake’ is the debut camper from Colorado studio Land Ark. I need to get me one!

Recipe: Makes 1 large serving or 2 “small” servings Ingredients Vegetable stock (either you use readymade or make your own) 1 clove garlic, chopped 1/2 tsp galangal powder or 1 knob fresh galangal 1 tbsp freeze-dried lemongrass or 1 stalk fresh lemongrass finely chopped up 1 tsp kaffir lime powder or 1 fresh kaffir lime leaf large splash japanese rice mirin as sweetener (use whatever you have/want to sweeten) 1 piece dried kombu (take out before serving, if you don’t have it – don’t worry) 1 tbsp red curry paste (make your own or use readymade) 3-4 tbsp coconut milk 1 tbsp tamari sauce (if not salty enough) ½ lime noodles of choice (I use shirataki) cherry tomatoes edamame spring onions fresh coriander pak choy (whatever vegetables you want to use really) Instructions 1. In a pot add all the ingredients except the veggies and bing to a boil. 2. Let the broth simmer for 15 min until fragrant and then add the veggies. 3. Serve when veggies are tender and top with fresh coriander, spring onions and lime. Enjoy! #LetsCookVegan
BBQ Cauliflower Tacos With A Tangy Cilantro Coleslaw @root_for_food 💚
RECIPE: Ingredients: *Cauliflower, 1 head, cut into florets *Garlic, 3 cloves, minced, *Onion, 1 whole, chopped * Cilantro, ¼ cup, roughly topped for topping *Olive oil *Corn tortillas BBQ Rub: *Garlic powder, ½ tsp * Paprika, 1 ½ tsp *Onion powder, ½ tsp * Black pepper, ¼ tsp *Coconut sugar, 1 tsp *Cumin, ground, ¾ tsp * chili powder, 1 ½ tsp * Salt, 1 tsp *Cayenne pepper, ½ tsp * Dash of cinnamon
Cilantro Slaw: *Red cabbage, 1 cup, thinly chopped *Green cabbage, 2 cups, thinly chopped *Cilantro, ¼ cup, chopped *Apple cider vinegar, 1 ½ tsp *Maple syrup, 1 ½ tsp *Dijon mustard, 1 tbsp * Salt, ½ tsp pink salt *Juice of 1 lemon Method: 1.Preheat oven to 375 degrees F. 2.Make the BBQ rub by mixing ingredients together. 3.Toss cauliflower, garlic, and onions in a generous 2-3 tbsp olive oil. Sprinkle with BBQ rub and toss again. Spread mixture out evenly on a sheetpan. Place sheetpan in the oven and bake for 18- 20 minutes. Stirring once. 4.Combine all of the slaw ingredients except for the cabbage and cilantro. Wisk and then add cabbage and cilantro. 5.Warm corn tortillas in the oven and assemble tacos. Top with cilantro and lime wedges. Enjoy! #LetsCookVegan
