Deliciously Cheezy Vegan Pizza Scrolls (Bread Rolls) / Recipe
DREAM COME TRUE.
Vegan Casserole, Taste Alfredo Sauce!!!
1 medium spaghetti squash (baked and scraped)1/2 cup creamy cauliflower sauce1/3 cup daiya cheese shreds1/2 cup cauliflower (sliced)1/2 cup sweet potatoes (cubed)1/2 cup brussels sprouts (quartered)2 Tbsp. fresh rosemary1 tsp. salt1 tsp. pepper1 tsp. basil1 tsp. oreganoCauliflower Sauce1/4 head of cauliflower2 cups water1 Tbsp. olive oil2 tsp. sea salt1 tsp. black pepper3 cloves garlicInstructionsCauliflower Sauce1. Boil 1/4 of a head of cauliflower florets in 2 cups of water for 10-15 minutes and save the water.2. Sauté 3 cloves of garlic in olive oil.3. In a blender, add cauliflower, garlic with oil, 1/4 cup of water from boiled cauliflower, and 1 teaspoon each of salt and pepper. Blend until smooth.Casserole1. Preheat oven to 400º2. Prepare all vegetables as described above.3. Line two baking pans with parchment paper. One is for the spaghetti squash and one is for the cauliflower, sweet potatoes, and brussels sprouts.4. Lightly spray the spaghetti squash and other veggies with olive oil, then season with sea salt and pepper.5. Roast vegetables 30-35 minutes or until tender with a fork6.Roast Squash for 1hr-1.5hr or until tender with a fork7. Remove pans from oven and spray an 8"-9" casserole pan with olive oil.8. After it has cooled slightly, scrape the spaghetti squash clean of "noodles." Set aside in a bowl for later.9. Reduce oven temperature to 325º.10. Add spaghetti squash to the oiled pan and spread it out in an even layer.11. Add vegetable mixture on top of the spaghetti squash. Pour cauliflower sauce over top and smooth it across veggies. Crumble goat cheese on top.12. Sprinkle fresh rosemary to your heart's content.13. Bake for 15 minutes on 325º. Enjoy.

Almond Praline Cake Balls
Cake: 1 3/4 c AP flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 c brown sugar 1/2 c oil 1 c almond milk 1 tbs cider vinegar 2 tbs vanilla extract 1/2 tsp almond extract
Praline: 1 c raw almonds 1 c blanched almonds 1 c sugar 1/2 c almond milk 1/4 tsp salt 2 tbs vegan butter 1/2 tsp almond extract
Drizzle: 1/2 c dairy-free chocolate chips 1 1/2 tsp coconut oil
Toasted almonds for decoration
For the cake: 1) preheat oven to 350 degrees. Grease 8x8 baking dish 2) mix together almond milk and vinegar, set aside 3) mix together dry ingredients in a large bowl 4) in a small bowl, mix together all wet ingredients 5) dump wet ingredients into the dry ingredients and mix well. Pour into prepared baking dish. Bake for 35 minutes or until a toothpick inserted in the middle comes out clean. Cool completely. For the praline: 1) grind both types of almonds in a food processor til fine (but not like almond meal) 2) in a small sauce pan, mix almonds, almond milk, sugar, salt and butter. 3) Cook over medium-low heat, stirring frequently, until very thick - about 8 minutes. Stir in almond extract. Let cool.
To make the cake balls: 1) crumble cooled cake until it’s all uniform texture 2) pour in praline and mix thoroughly (using your hands works best) 3) scoop and roll into walnut-sized balls and place on a sheet pan covered in wax paper or parchment 4) mix together chocolate and coconut oil and microwave 30 seconds at a time til all melted and smooth. 5) using a fork, drizzle cake balls with chocolate and top with toasted almonds (to toast almonds, bake sliced almonds at 350 degrees until slightly brown) 6) refrigerate or freeze until cake balls and chocolate are set. Let come to room temperature before serving.
