Heatwave Recipe Recommendations
The heat’s been brutal this summer but we still gotta eat! If you’re like me, heat might suppress your appetite, and the last thing any of us want is to sweat over a hot stove and oven when it’s already boiling outside. Here are some of my favorite hot-weather recipes to keep hydrated and fed with when the weather is unbearable! (All recipes should be un-paywalled).
NYT’s best gazpacho (lives up to its name!!)
Persian cold cucumber soup (if you like tzatziki you will like this!)
Eric Kim’s cold noodles with tomato (infinitely riffable Korean flavor profile — for a creamier and less brothy take, try these cold sesame noodles too)
Vietnamese chicken and herb salad (this is an excellent time to get a rotisserie chicken so you don’t have to turn the oven on)
Radish sandwiches with butter and salt (and in a similar vein, if you dig this flavor combo you should try this Polish cottage cheese dip on some good rye bread or even crackers)
It’s still a little early in the season, but you can never go wrong with a BLT (or, if you don’t eat bacon, try this tomato furikake sandwich in its place)
Infinite iterations of pasta salad! You can use anything you got but here is a template I like.
Assorted dense bean salads. This back pocket canned salad is a weird combo of jarred ingredients but it slaps, this hoagie-inspired one is super satisfying, and cowboy caviar is a classic for a reason.
Poke bowls! Canned tuna mixed with some kewpie mayo and sriracha is a budget-friendly riff on the usual ahi and makes everything taste like a spicy tuna roll, but use whatever proteins you like, this is more of a loose template.

If you can buy pre cooked or canned beets at the store, chłodnik (beet yogurt soup) is a great choice. You can leave out the radishes if you can’t get them.
I also love sardines on fresh bread and butter with assorted vegetables. Buy the fanciest canned sardines you can afford but even regular ones are pretty good. Plus, very healthy!
This requires cooking some of its ingredients but here's another eastern European cold soup that I like:
Cold summer soup Okroshka is made with boiled and fresh vegetables, eggs, fresh summer herbs, and meat. Perfect option for hot summer days
I make it vegetarian by leaving out the meat and adding some white beans + upping the seasoning
Korean icy cold noodles are so savory and refreshing, they are an awesome way to cool down in the summer but I eat them all year round. Why?

the new york times has such a great series of elevated butter noodles, if you ever want a super fast easy dinner that still feels grown up and you can emulsify pasta water + butter together basically the sky is your limit

chili crisp fettuccine alfredo
miso butter noodles
any one of these + a bag of salad or whatever vegetable side you find easiest/cheapest, and you've got yourself a full meal that tastes far above the effort you put in.
so i just made the peanut butter noodles and they are VERY simple and VERY tasty
i added extra parmesan because i like cheese and topped with some chili oil and green onion
took less than 20 minutes!

this is VERY funny and I don't want to step on the gag but as a former food service worker I simply cannot NOT explain the place crushed Oreo cookies have in the service industry because I think it's really cool, actually
So Oreos! Truly a 100+ year old institution (although we can argue about whether Hydrox came first/are better but that's not what this is about). Oreo was manufacturing using pretty modern equipment very early on right here in beautiful Manhattan in the old Nabisco factory that is now Chelsea Market. But an unfortunate issue with mass producing millions of very thin, very fragile crisp cookies is breakage. A lot of the wafers (the chocolate part) will crack or crumble before reaching the end of the production line. The machinery can be adjusted to reduce breakage but the nature of the wafer means breakage will never be zero. Sometimes the cookie gets to the sandwiching stage & filled with the creme before it cracks, but more often it breaks before then. That's why you have some bits with creme and some without.
So what does a cookie company do with all the broken pieces? The dough is already cooked at that point so it can't be reused to form more cookies. So Oreo comes up with a plan: develop recipes and alternative uses so they can sell the crushed cookies, too. This happens a lot in manufacturing! Leftover bits are repurposed for other products to reduce waste and cost. Probably the most famous example is animal feed; the husks and rinds and cast-offs from human food production often get processed into animal food.
Sadly this means most commercial Oreo dust is a pre-crushed situation. I grew up working in my family's restaurant and the Oreo pieces would arrive in sealed plastic bag inside a big box. We'd use them for pie crusts and dessert toppings. Being a sneaky lil shit, I'd sometimes dip a soup spoon into the Oreo dust and take one big, chocolatey bite as a snack. No need to crush them by hand.
Sorry to add real-world facts to a very good bit. I just really love manufacturing. And cookies.
