Betty's Steak and Mushrooms on Cauliflower Rice
Sirloin steak cooked in olive oil with sea salt and ground pepper, topped with fried mushrooms and onions on a bed of cauliflower rice with sea salt. A side of coconut curry greens and vegetables.
Ingredients
2 tsps olive oil 2 8 oz. sirloin steaks 1 tsp sea salt 1 tsp ground pepper
1/4 red onion, chopped 4 mushrooms, chopped 2 tsps olive oil
1/2 head of cauliflower, diced or ground in food processor 1 tsp sea salt
Cooking Method
Heat the olive oil in two frying pans on medium. One for the steaks and one for the mushroom and onion. Once the oil is hot add the onion and cook until translucent, and then add the mushroom. In the other frying pan, add the steaks with the salt and pepper. Cook for 5 or 6 minutes on each side for medium cooked steak.
In another frying pan, heat the coconut oil and add the diced cauliflower. Let it fry in the pan until the cauliflower is soft. You can serve the steak and mushrooms on the cauliflower rice, with a small side of leftover coconut curry with greens and vegetables.
