An interesting question indeed. Yes, it would be logical to assume the taste of dinosaur meat would be similar, in a way, to the taste of chicken. However, considering that many different types of dinosaurs existed, it's likely their meat would have distinctly, or at the very least slightly, different tastes.

For example, most sources I've seen concluded the meat of a Tyrannosaurus Rex would be borderline inedible due to its diet as prehistory's apex predator.
