Whole Wheat Oatmeal Pancakes
Okay at first glance this recipe does not sound delicious but, IT IS! And super easy. You can (and should!) add the spices that you like to this and add nuts, berries, chocolate, whatever you wish! The one thing I need to warn you about is the dough is very thick when you put it in the pan, I spread it down a little bit so they weren't soggy in the middle and it worked perfectly.They taste like nutrition bars and a very filling, my mom is a hard critic and she loved them!
1 cup (123g) whole wheat flour (or white whole-wheat)
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 large egg (or 2 egg whites)
2 Tablespoons dark brown sugar (or light brown)
1/4 cup (63g) Greek yogurt**
1 teaspoon vanilla extract
1/2 cup add-ins like chocolate chips or fruit, optional
*Can use almond, coconut, silk, any type of milk works
**Does not have to be Greek yogurt! Any type you like, although I do not recommend flavored other than vanilla or french vanilla
Dry first of course, in the cup measure with the milk add the egg and mix that together so the egg is blended (one less bowl!). Create a crater in the dry ingredients and pour the milk/egg mixture then all other ingredients into this hole. Mix from the inside out. DO NOT over mix or the pancakes will taste hard. Just until the batter is fluffy, you'll see what I mean. At this point cook with mix-ins or refrigerate batter for later use.
