Oxford!

Wowwowweewah, today I got an email asking me to come to Wadham College of Oxford University (like the Oxford) for an interview.

I'm not expecting to get past this stage, honestly. What amazingly talented and intelligent people have studied there in the past! But what a feeling being from my background and getting an interview at this place. State schools REPRESENT! 

I wonder if there's anywhere I can seek out vegan nosh in the beautiful city of Oxford?

-Whipping Cream: use the fatty top layer of a can of coconut milk, or a paste of 1 part raw cashews and 1 part non-dairy milk

-Whipped Cream: combine vegan whipping cream with sugar and vanilla to taste with a hand mixer. add a spoonful of margarine for a “dairy” taste and/or a spoonful of shortening to help stabilize the cream. refrigerate until ready to use. hand mix until fluffy and then serve.

-Custard: Cook 1 cup non-dairy milk, 1 tbsp cornstarch, sugar to taste, and a pinch of salt over medium heat, stirring constantly, until mixture thickens. Remove from heat and allow to cool. Add 1 tsp vanilla. Keep in fridge until ready to use.

-Cream Cheese or Sour Cream: tofu pureed (soft or medium) or avocado pureed and a dash of lemon juice can be substituted for cream cheese in cakes, dips, etc.

Je m'excuse pour tous des erreurs je vais faire! Alors, je cherche des restaurants "vegan" en PARIS parce que j'y vais l'année prochaine. Et je sais bien qu'il n'y a pas beaucoup des français qui ne mangent pas la viande/le fromage/le lait ETC.

Mmmmmmm biscuits.

Well aren't I a happy gal today! I found the amazing http://www.lazydayfoods.com

All their food is gluten free/egg free/dairy free/wheat free/VEGAN/no hydrogenated fat.

BRILLIANT.

And I've tried both the chocolate chip shortbread and the millionaire's shortbread and it is s o o o good.

(Some of) Their products are stocked in Tesco at the moment, but you can buy them online so I think I'll just sit and home and order them and be a fat vegan.

L O V E SNACKING ♥♥♥

Am I the only person who thinks snacking is absolutely necessary? Between lunch and dinner I really can't concentrate on my work without nibbling on something in between!

Now, in the pre-vegan days my snacking choices were not the wisest. I would eat cookies and milk or ice cream or maybe some sweets.

Now, I do snacking right (if there is a right way of doing it). My personal fave is big old chunks of pineapple (obviously in that crazy picture above where I am just SO happy to have some pineapple). Have some pineapple facts:

It has no fat, saturated fat, OR cholesterol. 

It's very high in vitamin C (good for the immune system!)

Pineapples contain bromelaine, an enzyme which can reduce arthritis pain by preventing inflammation. 

Although don't go OTT on the stuff as it is kinda high in sugar so you know, don't get fructose cray cray. 

I don't know if this 'eat little and often' business is a healthy guide, but little snacks do stop me cramming my face at dinner time; helping me understand how full I really am (not how eager my eyes are)

Fruit (dried OR fresh I really don't mind just give me all the fruit) nuts, smoothies, veg and a dab of hummus or a little dark chocolate- my faves xxx

Oh, wow. I have completely neglected this little blog for the past couple of months because I've been a busy little buzzy bee.

(Thank you for the fact I've actually gained followers- somehow- and reached 100! You little gems, you..) 

There is a lot I wish I had blogged at the time it actually happened, although now I have a little more spare time to be a fab vegan tumblr person I can maybe post a few bits and bobs....just 2 months later.

I've been busy, stressed, and at times extremely depressed but let's not get into that, I'M BACK. I've been doing super important grown up things like visiting universities all over the country and completing my UCAS for universities like Oxford. Dude, things just got serious. As well as, of course, getting excited over cute vegan things like disney princess chocolate lollies.

I love being on here, so many inspiring blogs and recipes which I'm too lazy to cook (I will one day!)

Don't 'shame' others

I've never actually come across vegans who I have disliked but I know people who have. 

I understand some people are really super dedicated to veganism and the ideas and beliefs surrounding it way beyond the food we consume. But this isn't an invitation to challenge perhaps newer or less strict vegans. I see veganism as a way of life which just continues to develop and goes beyond food to changing the way I live little by little.

Every person even just considering the vegan route let alone actually trying it out should be encouraged and given guidance, not shamed for being less concerned about things that concern you and your life a great deal. Perhaps instead of telling them that they're wrong for not doing/doing something...show them and explain them. Help them to understand and grow.

I don't know, I just feel like we should all be best friends.

Why I haven't been blogging

Okay so I've been a little stress-head recently. 

I've been waiting on my AS (half an A level) results and panicking to the max. These go on my UCAS entry so determine whether the universities I apply for want to take me on (KINDA IMPORTANT)...

So now I'm just sitting here snacking on lightly salted tortilla chips and chunky hummous beacause I am very pleased with myself!

Now I can get really stuck into my personal statement, in which I talk about my veganism and wanting to study ethics within the philosophy module (woohoo)

I am seriously failing in the blogging business right now.

I'm working 6.30 - 3 every day being a farmer (veg- not animals that'd be awful) and I'm always tired and frankly I forget what I've eaten or what I've done.

I realised gone-off hummus tastes like cheese.
