I have the little headcanon that they left Erik alone while he was imprisoned in the Pentagon in DoFP. Is it possible they still found a way to experiment on him? Sure. But the way they explain it in the movie leads me to believe they didn't touch a single hair on his body. I think he used his powers to keep them away.
Charles describes his prison cell as being under a hundred floors of pure concrete and sand, no metal in sight.
But that's not really true, is it? Sure there isn't any metal in the foundation itself, but you have plenty walking metal sources around. Our bodies have all kinds of metals in them. There is about 3-4 grams of Iron in an adult human body. A penny weighs less.
In various media he has been able to control bodies through the Iron in their blood. In theory, he could control the electromagnetic fields in the brain and achieve a sort of mind control. He's done something similar in the comics before, although understandibly most writers tone this power down; it would make him too powerful to ever loose a fight. He also usually needs skin contact and total concentration (guess who is meditating when they first show him in his cell in dofp. I give you a hint, it's not wolverine)
What i'm getting at is that with no more than trace amount of metals near him, his abilites would likely be fine tuned for any metal traces. He'd be more sensitive to smaller amounts of metal than usual.
His food gets dropped from like two or three meters above, they are not taking any chances with him.
I like to imagine he just killed the scientists and guards that dared to go near him by stopping blood flow to their brains or something. He's badass like that.

I'm rewatching a lot of xmcu and mcu lately, Jiaying (Agents of Shield) has so much in common with Magneto. Since the mcu didn't have rights to mutants, they used inhumans as a stand in, so I wouldn't be suprised if they took some inspiration. Jiaying is basicially an inhuman magneto for the story.
Both Erik and Jiaying have been experimented on by Nazis in World War 2 because of their powers. Erik by Shaw (in the movies at least) and Jiaying by Hydra and Whitehall.
In the comics, Erik kills an entire village in revenge after loosing his daughter Anya. In Xmen: Apocalypses he does something similar when he looses Nina. Jiaying (and her husband) did the same when they lost their daughter Daisy. While Daisy didn't die, Jiaying has lost a child before.
They have both become leaders to a hidden safehaven for their kind. Erik founded Genosha and Jiaying guided new Inhumans in Afterlife and was seen as a respected elder.
They've both tried to turn everyone into mutants/inhumans on a global scale, despite knowing this would likely kill many humans.
They've met their child through timetravel shenanigans, their other timeline version died. Peter met Erik earlier than in the original timeline thanks to a timetraveling Wolverine and Daisy met a pre-Hydra version of her mother in season 7 of Agents of Shield. Wolverine travelled to 1973. The shield team to 1983.
Both also tried to kill their child at least once, although to be fair, Erik didn't know. Said children are also crazy powerful and in the case of Peter and Daisy, only met their parent at like 26.
