Of the Lent Challenge 2016 Living a Plant Based Diet
🍇 Breakfast - X1 Banana and a green smoothie Handful of Strawberries and blueberries, handful of spinach, cucumber, glass of coconut water, half a tbs spirulina, spoon of camu camu powder, tbs LSA mixture.
🍇 Snack - Handful of almonds and dried cranberries
🍇 Lunch - Salad - Tomatoes, carrot, spinach, brown rice, cucumber, black beans. Dressing: Apple cider vinegar and extra virgin olive oil, salt and pepper.
🍇 Snack - Roasted Veggies
🍇 Dinner - Salad, roasted veggies, pumpkin and sunflower seeds, wild berry herbal tea.
Day 1 of the lent challenge… This yummy bean rice salad!! 😃

Day 2 lunch... Coconutty green bean salad. 😃 Ingredients: Carrot Parsley Red pepper Tomatoe Cucumber Green beans fried in coconut oil with sunflower seeds Dressing: Apple cider vinegar with extra virgin olive oil, pepper and salt. Method: Chop up all the main salad ingredients into a bowl. Sauté the green beans with 1 tbs of coconut oil in a saucepan, add sunflower seeds and pine nuts. What gives this a real tangy flavour is the parsley mixed with the delicious coconut sautéed green beans. The apple cider vinegar adds that super burst of vibrancy in the mix!
