Lazy Ladyâs Sloppy Joe
Well, Pi is on a health kick at the moment which means that all the great junk food I love and adore, needs to have a healthier side to it. One of my very favourite meals as a lazy single lady is the marvelous Sloppy Joe: mince, white bread, and a fried egg, what could be better after a long day of work?
Well as I said, Pi is currently on a major health obsession right now so I need to take my favourite meals and make them healthier... fun.
Well, this didnât turn out to be quite so difficult and was actually really yummy. So here is my personal take on the Sloppy Joe for the Lazy Lady.
In the Fridge: 2 slices of bread per person 50g mince per person 1 tsp olive oil 1 little pinch of crushed garlic 2 slices of shoulder bacon per person 2 eggs per person Corriander Paprika Salt Pepper Fresh Basil leaves Baby Spinach
What to do: 1. Rinse, tear and mix the basil and baby spinach. 2. Toast your bread, whatever bread you prefer: rye (a personal favourite), white, brown, whole wheat, gluten-free... whatever you choose, toast it. 3. Fry up mince with garlic and spices in the olive oil. 4. Fry up bacon the eggs. 5. Arrange in this way: toast, baby spinach and basil salad, bacon, mince, egg.
Well, thatâs it, a healthy take on the classic Sloppy Joe for the Lazy Lady. Pi loves this meal, especially the egg whites and baby spinach. If you want to add your own ingredients to this meal, like cheese or olives, or take something out, like the spinach, hell, itâs not for everyone, feel free. Cooking is supposed to be enjoyable and let you make the food you want to eat. Recipes are just a guideline.Â
